Peasant Bread

About a year ago I acquired this delicious recipe from my friend Kate and I've rediscovered it this month. We LoVe it so I want to pass it on to all of you. It is the PERFECT companion to soup on these 'cold' & blustery winter days. (I personally think it's better than Macaroni Grill.)

Peasant Bread
1 pkg. (about 1T.) yeast
2 c. warm water
1 T. sugar
2 tsp. salt
Mix in bowl & stir until everything is dissolved.

Add some of your favorite spices, ie: 1/2 tsp. Basil, 1/2 tsp. Oregano, 1/2 tsp. Rosemary, Italian Seasoning, etc.

Add 4 cups (more is you need) and stir just until it's mixed. (Do Not Knead!)
Cover and let it rise for 1 hour, until it doubles in size.
Oil a cookie sheet & sprinkle with cornmeal.
Flour your hands & make 2 round loaves- or 3 long, skinny ones.
Let rise up to 1 hours.
Brush with melted butter & sprinkle with garlic salt &/or Parmesan cheese if you want.
Bake at 425 for 10 minutes.
Then turn oven down to 375 & bake for 15 more minutes (this may vary depending on your oven).

Remove & brush with butter again.

ENJOY!

Where in Vegas do you live? We might be moving there for Spencer's job. We could have play dates a lot. :)
